Combine rye flour and water in your jar, mix until smooth, and cover with the linen lid. This first feed wakes up the natural yeasts.
Feed & Grow
Each day, discard half and feed with equal parts flour and water. Your starter will begin rising higher and becoming more active.

What if I forget to feed it?
Don't worry - it happens to everyone. Your starter is more resilient than you think. If you miss a feed by a day or two, just discard half and feed it as normal with equal parts flour and water. It may take an extra day of regular feeding to bounce back, but it will recover.
What if my starter doesn't work?

How long will my starter last?
Forever - seriously. As long as you keep feeding it, a sourdough starter can last a lifetime. Some families pass them down for generations. You can even pop it in the fridge to put it on pause, only requiring a weekly feed.
Can I use different flour after I run out?
Absolutely! Once your starter is established, you can maintain it with most flours - bread flour, all-purpose, whole wheat, or rye. Each will give slightly different characteristics, but your starter will adapt.
How do I know when my starter is ready to bake with?
The float test is your friend. Drop a small spoonful of starter into water - if it floats, it's ready. You'll also notice it doubles in size within 4-6 hours of feeding and has a pleasant, slightly tangy smell.
